Recently I had to cater for a couple of vegan guests and as such I needed to invent plenty of tasty, guest-worthy organic & botanical breakfast ideas fast. The result was a delight for the tastebuds and today I wanted to share these tried and tested recipe ideas with you.

There is a lot of interest in a botanical, i.e. vegan lifestyle nowadays, especially as there are health benefits (heart health) for the individual and the UN has recently recommended a vegan lifestyle to help feed the world, as animal production takes up valuable resources away from the food chain.

Yet, it can still be difficult to find good plant based recipe ideas. It seems to me that we are generally a bit fed up with animal products but it is still constantly presented to us as the main choice.

Here are my ten botanical breakfast ideas that won’t put pressure on your digestive system or your heart, nor send your cholesterol levels into oblivion and won’t drain the resources of the planet so that the other half go hungry either.

Here are my 10 organic and plant based recipe ideas for fast and slow breakfasts:

 


  1. Buckwheat/Orange Pancakes
    • Ingredients :
    • Buckwheat flour
    • Orange flour
    • Fresh Oranges
    • Almond Milk
    • Coconut oil
    • Agave Syrup

Method :

  • Use buckwheat flour, or if you have a high-speed blender place groats in it to make flour, and add orange flour.
  • Add almond or oat milk to flour and mix well to remove any lumps.
  • Melt coconut butter and add to pan.
  • Bake pancake from both sides.
  • Once pancake is ready, dress with orange slices, orange jam, or orange/agave sauce.

  1. Breakfast Muffins
    • Ingredients :
    • Flour
    • Banana
    • Almonds
    • Hemp Seeds
    • Almond Milk

Method :

  • Make a smoothie out of almond milk, almonds, hemp seed and banana and pour into the flour.
  • Mix well until the consistency of mashed potatoes.
  • Fill mash into muffin baskets, building them up like little towers.
  • Bake until ready.

  1. Fruit Salad
    • Ingredients :
    • Oranges
    • Bananas
    • Apples
    • Strawberries
    • Mango
    • Desiccated Coconut

Method :

  • Blend Oranges in blender adding no water. Add a bit of agave syrup if wanted and pour into service tray.
  • Add sliced or cubed fruits on top in pretty arrangement.
  • Drizzle with desiccated coconut.

  1. Fried Tofu Sandwich
    • Ingredients :
    • Firm tofu
    • Coconut oil
    • Pink Salt or Soy sauce
    • Sesame Seeds

Method:

  • Slice a firm block of Tofu into slices and dip in soy sauce or rub with salt.
  • Toss into sesame seeds so that they stick to the tofu.
  • Then fry both sides in oil for some time.
  • Serve with tomato sauce and toast.

  1. Muesli
    • Ingredients :
    • Rolled wholegrain Oats (not instant)
    • Dried Nuts
    • Dried Fruits
    • Fresh Fruit
    • Almond Milk

Method :

  • Create a blend of rolled oats, chopped nuts and dried fruit.
  • Add fresh fruit and serve with almond milk.

  1. Indian Potato Roesti
    • Ingredients :
    • Wholemeal Flour
    • Potatoes
    • Fresh Green Peas
    • Curry Leaves
    • Seeds: Mustard, Cumin
    • Turmeric
    • Hing Powder
    • Coconut Oil
    • Water

Method :

  • Boil potatoes and peas and set aside (if you use frozen peas there is no need to pre-boil).
  • Make flat bread by mixing water in flour then roll into a dough sausage.
  • Take a nob off the dough sausage and roll with rolling pin into a flat pancake and bake in pan 
on both sides until ready.
  • Heat oil, add mustard seeds, wait until they pop, then add cumin seeds, hing powder and 
turmeric. Move speedily so as not to burn the seeds.
  • Then add potatoes, peas and curry leaves.
  • Add a dash of water.
  • Serve with flat bread.

  1. Italian Tomato Bread
    • Ingredients :
    • Vine toms
    • Red onions
    • Olive oil
    • Garlic
    • Pink salt
    • Pepper
    • Lemon juice
    • Bread roll (Ciabatta)

Method :

  • Cut bread roll in half and brown in pan on both sides.
  • Mix garlic, lemon juice and olive oil, salt and pepper into chopped tomatoes.
  • Serve warm bread roll topped with tomato salsa.

  1. Chocolate Smoothie
    • Ingredients :
    • Banana
    • Vanilla Essence
    • Almond Milk
    • Chocolate Powder
    • Soaked Almonds (4 hours)
    • Agave syrup
    • Pinch of Salt

Method :

  • Place all ingredients in the blender and blend until smooth and creamy.
  • You can make a vanilla version by adding hemp seeds and vanilla instead of chocolate.

  1. Hot Blueberry Porridge
    • Ingredients :
    • Rolled Oats
    • Oat Milk
    • Hot water
    • Jam (blueberry/raspberry)

Method :

  • Boil porridge oats with hot water and oat milk.
  • Stir in blueberry jam and fresh blueberries just before serving.

  1. “On the Go” Breakfast Drink
    • Ingredients :
    • Oat groats (soaked overnight)
    • Banana
    • Orange
    • Apple
    • Berries

Method :

  • Blend oat groats with fruits in blender and enjoy this wonderful breakfast drink (if runny) or as a porridge (if firm).

Method :

  • Place all ingredients in the blender and blend until smooth and creamy.
  • You can make a vanilla version by adding hemp seeds and vanilla instead of chocolate.

    • Hot water
    • Jam (blueberry/raspberry)

Method :
